Eye of round roast, thinly sliced

For the marinade
3 jalapenos sliced
1 tablespoon worcestershire sauce
2 teaspoons pepper
2 tablespoons salt
1 teaspoon onion powder
1 teaspoon garlic powder
2 cups dr. pepper
1/2 cup brown sugar

Combine all ingredients and bring to a boil. simmer until just over a cup left.
Put sliced beef and marinade in zip lock bag and refrigerate it overnight.
remove beef and pat dry the sliced beef.
Set smoker to 175 and smoke for 2 - 3 hours. Sometimes it can take more, depending on how thick you sliced it.
When done, place in another zip lock bag, don't seal it up. let it rest in the bag and steam

Don't they sell that pre-made?

Seems a lot simpler...
It’s not illegal to stick feathers up your ass and run around town telling people you’re a peacock either. Still pretty stupid though.

Imagine thinking you can get good jerky in Minnesota.

(I live in Chicago. I have never bought jerky. I just thought that was what I was supposed to say.)

Pretty close to my marinade recipe, I use ghost pepper sauce rather than jalepenos and I'll add quite a bit of terriyaki as well. I'll try the Dr. Pepper. I usually cut mine a bit thicker and give it a good pounding (that's what she said) with a meat mallet to tenderize.

Time to get some curing salt and fire up the machine.

Last batch was a bunch of beef products in the clearance bin at cub ground up together. A roast, some different steaks and burgers.

Turned out perfect.

I bought a lb. of Oberto Original from Costco for 16 bucks. It sucks. I'm not even sure why I buy store bought jerky. My parents swear by Schmidt's Meat Market in Nicollet. You're shelling out 20 bucks plus for a pretty small bag of teriyaki. It's OK. That's why I make my own.

Venison, elk, pronghorn or caribou? There is an inuit site somebody here linked years ago that had some good elder recipes. My stepdad sends me a package of homemade venison jerky every year - it’s the bomb.

Made some sriracha beef jerky over the weekend

top round 2 pounds
1/4 cup fish sauce
1/2 cup sriracha
1/4 cup sesame oil
1/4 cup brown sugar
4 cloves of garlic, minced
3 tablespoons chopped cilantro

leave out the brown sugar if you don't want sweet
