Covid lockdown smoking projects thread

Been firing up the kettle a bunch over this period. SO far:

Italian beef chuck roast.

Carnitas pork shoulder. tacos

Porketta loin roast.

Duck with orange sauce.

Lamb loin chops with carolina mustard bbq sauce.

Tonight going with a massive thick cut porterhouse and sea scallops over mesquite. Favorite so far has been the lamb chops.



What are the rubes smoking during the lockdown?

Reverse sear your steak. You'll never go back cooking it the other way.

I smoked up some meatloaf and mac & cheese yesterday.

might go pick up the 99 cent a pound pork shoulders at cub and smoke them.
Need to go stock up on coal and wood.

Been doing some light smoking with the kettle, burgers, steaks, chops. Give everything a 20 min smoke before finishing over fire.

If you do, only smoke them for about 45 minutes at 225. Finish it on a hot cast iron pan or in the oven. To much smoke will take away from the flavor of the lamb.
