I think it's either Goodby Yellow Brick Road or Saturday Night's Alright for Fighting or maybe Daniel.
I don't give a fig for the simplicity on this side of complexity, but I would die for the simplicity on the other side of complexity.

Rocket Man is the first song I always think of when it comes to Elton.

I wasn't a huge fan of Tiny Dancer until the bus scene in Almost Famous and I really appreciate that song now.

Also in the running Goodbye Yellow Brick Road.
