12 hours total. 9 hours smoked at 275F, plus 3 hours resting

Smoked my first brisket labor day weekend. I'm still proud of myself for how good it came out. Thinking about doing another or maybe some pork this weekend.

Ribs are dry rubbed and I just made my Memphis style mop.

Apple cider vinegar, paprika, cumin, onion powder, garlic, coriander, black pepper, salt, dry mustard, cumin, thyme, oregano and child powder.

Hoping I can control the temp to right around 205F which should allow me to cook them for about 5-6 hours!
